I picked and froze rhubarb this past weekend. Last year I froze 40 cups this year so far only 12. I love rhubarb, and I really love having this blog it is such a nice way to check on when I did things last year- turns out I picked last year almost on the exact day. Anyway I have picked more than I have frozen I made the rhubarb cake that I posted last year and then I made rhubarb soup. Yep rhubarb soup- it is a cold soup and I really really like it. And it is so simple to make, and it is really pretty too.
Just need a pound of rhubarb, 4 cups of water, 1 cup of sugar, and 2 tablespoons corn, or potato starch. Heat the rhubarb and water to a boil turn to a simmer for 5 minutes- turn off heat add sugar, dissolve starch and heat to a boil again turn off and chill. I also made whip cream to add to the soup.
