Rhubarb Cake Recipe




Today was a sort of harvest day. This time of the year is the hardest I think, it is so nice out you get the craving for fresh veggies and fruit but nothing it really ready- that is except rhubarb and asparagus. With todays harvest I froze 40 cups and made some rhubarb cake. I thought I would share the cake recipe. If you are not lucky enough to have a rhubarb plant it is a good time to go to the farmers markets- I bet you can find some there. When you bring it home just put it in some cold water to 'recharge' it.

Rhubarb Cake
1.5 cups brown sugar
1/2 cup butter
1 egg
2 cups flour
1 teaspoon baking soda
1 cup milk
2 teaspoons vanilla
2 cups rhubarb

Heat oven to 350 degrees. Cream the sugar and butter. Add egg. Mix flour and baking soda. Add half flour and half milk mix well, add the rest of flour and milk. Add vanilla and rhubarb. Grease 9x13 pan. Pour batter in pan and top with 1/4 cup sugar and 1 teaspoon cinnamon. Bake for 30 t0 40 minutes. Enjoy!
